Review of Redifer Local Meal

This Tuesday, I had the pleasure of eating a sustainable meal at the Redifer dining commons. I was enticed by the opportunity to try trout for the second time and support a program that has great environmental intentions. For just a minute I'm going to pretend I'm a guest judge on one of my favorite shows- Chopped! I thought that the trout was cooked to perfection- moist but not under cooked. The potatoes and beets were also cooked well as they had just the right amount of bite, and were complemented by the tartness of the sauerkraut. The only criticism I had was the proportionally large amount of sauerkraut compared to the other components of the dish. Altogether I had a great dining experience, and I would suggest it to anyone who wants to have a great meal and a small negative impact on the environment!
